Chocolate mouthfeel, marzipan, cherry and bramble

This coffee was grown by various Me'phaa producers in Montaña Alta de Guerrero. This region has long been abandoned and isolated. These indigenous farmers grow coffee in the forests around their homes. These wild coffee trees are harvested and the cherry is dried on a tarpaulin in their gardens. Once suitably dry, the cherries are collected by the Ensambles team. They then meticulously analyse, grade, sort, mill and cup the coffees. After cupping the coffees are sorted by quality and profile. The farmers receive premiums for high yield and high quality.
